Ingredients

  • 12 oz spaghetti
  • 2 tbsp olive oil
  • 3 garlic cloves, sliced
  • 28 oz crushed tomatoes
  • ½ cup grated parmesan
  • Handful of basil
  • Salt and black pepper

Method

  1. 1Boil the pasta in well-salted water until just shy of al dente.
  2. 2Warm the oil and garlic in a wide pan until fragrant. Add tomatoes; simmer 12 minutes.
  3. 3Toss pasta with sauce and a splash of pasta water. Finish with parmesan and basil.

Method

  2. 2Whisk milk, egg, and butter separately, then fold into the dry mix just until combined.
  3. 3Cook ¼-cup portions on a buttered skillet until bubbles form; flip and finish.

  • 2 cans cannellini beans
  • 2 tbsp olive oil
  • 1 shallot, chopped
  • 3 cups baby spinach
  • 1 lemon
  • ¼ tsp chili flakes
  • Salt

Method

  1. 1Sauté shallot in olive oil until soft.
  2. 2Add drained beans, chili flakes, and ½ cup water. Simmer 6 minutes.
  3. 3Fold in spinach, lemon zest, and lemon juice. Season generously.
